Abstract
This research paper outlines the effects that food insecurity has on those living in the United States and the legislation that is affecting the access Americans have to inexpensive, nutritious food. Legislation such as the Farm Bill has created a surplus of inexpensive, highly processed foods consumed in large amounts by Americans, particularly those from lower socioeconomic statuses. High consumption of processed food can lead to health problems, many of which are present in the health crisis the United States is currently facing. The Information in this paper was retrieved from various peer reviewed research articles and documentaries. This paper is accompanied by cookbook filled with nutritious, inexpensive meals, created as a resource for those who are food insecure.
